The Spice Trade:
Americans are cutting salt and fat from their diets
- but not taste. Instead, they're sprinkling spice - and lots of it -
on food. The American Spice Trade Association reports a 50-million-pound
jump in consumption since 1989 and entrepreneurs from coast to coast are
finding ways to tap into this trend for exotic flavor. For example, there's
a Californian who's marketing jalapeño pepper lollipops and a New
Yorker who opened a spice supermarket.
The King of Jerk
"People used to be afraid of hot foods."
Says Allan Vernon, founder of Vernon's Jerk Sauce Inc. "But today
even McDonald's sells spicy foods."
Vernon, a Jamaican born restaurateur, took the
advice of his customers and marketed Vernon's Jerk, a sauce he'd been
serving at his two New York cateries since 1982. Last year, he contacted
a spaghetti sauce factory to bottle his jerk (that's the jolt you get
from the spices). He's since been moving 200 cases a month of the $4 sauce
through Macys, Bloomingdales and mail order. Even Bill Cosby calls 1-800-660-JERK
when the urge hits. Vernon says sales will top $200,000 this year. |
